June is the month for new beginnings and celebrations- graduation, Father’s Day, and Juneteenth (19th). Fresh, delicious, locally sourced food can bring people together for the best reasons! Farmers' markets and roadside stands may be selling strawberries, herbs, pea greens, chives, and rhubarb. Try this quick, tasty sauce made with fresh rhubarb on your morning pancakes or a hot afternoon, ice cream:
- Combine ¾ cups fresh-cut rhubarb with ¾ c. granulated sugar and cook until rhubarb is softened.
- Remove rhubarb and continue to cook liquid on reduced heat until thick.
- Add to reserved rhubarb and let cool. Refrigerate uneaten sauce.
